Hi everyone, can anyone tell me how to cook fish(not battered ) without it turning into rubber and bouncing round the kitchen(dont you dare laugh Annie) that is what happens to mine every time a try to cook it, what am I doing wrong??? i need an answer before dinner if possible lol otherwise it is back to the drawing board, I thank you in advance:notworthy:

Your over cooking it Dee!!
Fish should be cooked quickly and lightly - depending on the fish and how you cook it for example a salmon fillet wrap in foil and oven bake at 350 for 15 minutes.

Hi Innvic, thank you thank you for that , would it be the same cooking time for say white fish, sea bass or cod or something like that, and lastly what would I seaon it with before cooking it??

Yep - and maybe less if its thin fillets - you just need to cook it until it goes opaque and loses the translucent color. Season with whatever you like. Black pepper and butter is nice or some fresh herbs.....yummy

Hi Dee,
No good asking me, I have to ask Ted whether I cook the eggs or the bacon first!!!
Actually Ted did us a lovely meal with fish the other night; they were Tilapia fillets - I think he cooked them in the frying pan quite quickly and then he did
some rice with real lemon juice, very tasty - I actually gave him a kiss cos it was soo nice!!!
Good luck, tell Carl when your divorce comes through that Ted will marry him and do the cooking as long as Carl keeps him in the manner to which he has become accustomed.

:D :D Annie what are you like, does Ted like Dr Who Top Gear and Star trek , if he does then he is in with a chance oh he must also like cars boats computers and any fiddly things that men play with(no rude comments please,this is a family show), anyway thanks to lovely Innvic I am going to follow his rules:confused: wish me luck, I will need it.

Oh Julie:notworthy: I am so sorry,but followed your advice the fish was delicious,so a blue peter badge for you:) Should have known it was a lady answering me lol Had to use Tilapia , but tomorrow I am going for sea bass:confused: Thank you once again.

:D :D I can cook, just not fish, although after tonight all I can say is Delia Smith eat your heart out. And at week-end I am doing shepherds pie, providing I can find one small enough to fit in the dish lol(a shepherd that is);)

Oh and use minced lamb for the shepherds pie not beef (which is actually then cottage pie and using real shepherds is frowned upon except in Wales where there is a surplus of them :-))....but whichever you use and add some Lea and Perrins ...yummy!

oh and Annie ask away anytime...I'm a great believer in simple cooking that looks and tastes a million dollars. I wont ever suggest anything complicated to do...who can be bothered with fiddly things that tend to curdle or go lumpy at the last minute! I like to keep it simple so you can drink wine when your cooking! hic!

Sounds good to me, especially the wine part!!! Actually I did a shepherds pie tonight which hubby said was delicious - actually don't know if the meat was beef or lamb but will def use lamb next time. Thanks for the advice.
By the way what do you think about crock pots/slow cookers?

Hey this is great its getting like womans hour, Julie you will have to come down to one of our coffee mornings and bring your recipe book lol, I would never have thought of putting Lea and Perrins in my shepherds pie!!!!! By the way I know you are in Vermont but plenty of room here lol,and Annie I love my crockpot I make a lovely beef stew with red wine, tis really good after it has been cooking slowly all day mmmmmmm

I have crock pot too - love it. Try slow roasting joints of meat (just stick an onion and a little water inthe bottom then your hunk of beef or lamb/pork on top. leave it all day on low then zap in oven for 15 - 20 mins to brown and crunchy it off. The yummy juices in the bottom of the crock make great gravy with a little Bisto (which I've now found at a supermarket 15 miles from us!)...or my fallback of chicken portions veggies and tin of mushroom soup - easy peasy
To Innvic and any other cooking guru.
My hubbie raves about Ham and pea soup. I have got the recipe from his mum. Only prob is I don't seem to be able to find the right ham joint. You gotta remember I grew up on frosties, school dinners and curries. Apparently his mum used to boil a joint of ham, slice some off for sandwiches and use the rest for the soup.
The closest I have got is getting ham bones from the Baked Ham Shop on OBT. Has anybody ever managed to find the right joint of ham to make ham and pea soup?

Tracey cooked me a curry tonight which was just OK, ...and last night some salmon which was a bit chewy. ...but you know what! .....
I blame Ted!
He fitted the plug on the new cook top and things haven't been the same since.
Anyway, I probably hadn't had enough wine to enjoy it ;)
I'll learn!

I've had no luck buying decent ham here - I'd use Gammon joint in the UK - soak it over night to get rid of the salt. here (well at least in Vermont) all the Ham/Gammon is already cooked. If you can get it uncooked do it in a pressure cooker with onion, calery carrots and leek. - gets more flavor out and use dried peas (or lentils which are yummy!) If no pressure cooker cover in loads of water and boil for hours! then remove ham and boil stock to reduce before adding peas/lentils Don't add any salt!
