Know exactly what you mean, nothing seems to cook the same. If all fails get a friend to put a large bag in a tin and post it to you

Being a "Domestic Goddess" I bake several times a week :-)
I use plain flour and add baking powder (1 tsp to 1 cup)- the commercially available Self raising flour is poor!

Don't forget to seive the flour and Baking powder together about three times to ensure an even distribution and good results. What are you baking, just to be nosey!!!!

I agree with InnVic...not about me being a domestic goddess, but about adding Baking Powder! Although that's a good tip, Kirsty41, about sieving it several times...I usually dump it all in sieved once only...:D

I just dump it in, don't even seive...but I guess it depends upon what you're baking..If it was a Sponge cake I'd seive, but everything else I slop in and stir!!

I do the seiving bit because I make up a vat of SR flour about once a fortnight and I have one husband and two daughters who use our UK recipebooks and when they do, it's "MUUUUUUUUMMMMMM". Anything for an easy life.
